If any hotel had that choice I would chose it; I never go to take breakfast when on vacation because I like to sleep and, as you very well say, the breakfast time ends at 11 am and I prefer to not wake up at 10 m to go and have breakfast, I am not lazy, vacations to me are a very good source of putting my sleep up to date and there is no breakfast that will drive me away from doing it. Bottom line, yes I would love to be served breakfast at the time I choose.
